For the Hoffman family, a restaurant is more than a place to eat. It is a place to gather, celebrate, share stories, and feel at home.
In 2020, the Hoffman family moved to Pooler, Georgia, from Green Bay, Wisconsin, ready for a new chapter in a warmer place to call home. They quickly fell in love with the community and knew they wanted to build a local dining destination where people could come together, connect, and make lasting memories.
Pat brings more than 10 years of restaurant ownership experience from The Creamery, where he developed a passion for creating memorable dining experiences. At Noble Roots, he is hands-on almost every day, working alongside the team and welcoming guests with the kind of warmth that turns dinner into something personal.
Kristie brings that same spirit of connection and creativity to the restaurant after owning Elements Salon for 20 years. She helps wherever she is needed, adds her personal touch to the atmosphere, and helps create the inviting experience that makes Noble Roots feel special.
Their sons are part of that story too. Oliver, a business management student at Georgia Southern University, works in the kitchen, while Everett, a student at New Hampstead High School, helps create the guest experience on the front-of-house team.
Just as a vine carries its character from its roots while being shaped by the soil, climate, and environment around it, Noble Roots carries the family’s history while being shaped by the Pooler community they now proudly serve.
At Noble Roots, guests can enjoy elevated dining in Pooler with an experience that fits both casual evenings and special occasions. The menu and bar program celebrate everything from craft cocktails, bourbon, and an extensive wine selection to comfort favorites like cheese curds and burgers, alongside standout dishes like filet mignon, ribeye, and New Orleans-inspired pasta.

Something many people do not know is that much of the decor, decoration, and overall vibe inside Noble Roots was personally created by Pat and Kristie themselves. They both love art projects, home renovations, and building things together, and that hands-on energy can be felt throughout the space.
Another detail that makes Noble Roots so unique is the artwork on the walls, which has drawn a lot of attention. The art pieces were created by two very special artists, and it adds another layer of personality and meaning to the restaurant’s atmosphere.

We are very proud to offer some of the best steak and the best hamburgers, hands down, here in Pooler, Georgia, and we would go so far as to say they stand among the best anywhere in the Savannah area.
The meat we select and the love we put into our cooking ensures not only great burgers and steaks but into our entire menu is unmatched.

Pat Hoffman has built lifelong friendships within these walls, and that spirit can be felt throughout the restaurant. It is not uncommon to see guests sharing a bottle of red with one table while another enjoys a bottle of white, or to watch someone walk across the room to offer a recommendation, share feedback, or simply connect. That sense of openness and ease is part of what makes Noble Roots feel so unique.
